Do I need to know music theory?

Nope. Sonorus handles key selection, chord voicing, and harmonic function for you. Just describe what you want - "sad verse", "upbeat chorus" - and it figures out the theory. That said, if you do know theory, the chord picker gives you full control over every harmonic choice.

What DAWs does the MIDI export work with?

All of them. The export is a standard MIDI file. Ableton Live, Logic Pro, FL Studio, GarageBand, Reaper, Pro Tools, Cubase - if it reads MIDI, it works.
